Beauty Is the love in his eyes. Today was a difficult day. I was overwhelmed with sadness after a much anticipated trip to Geisinger Medical Center. Hubby spent time reassuring me, time he should have spent resting for work. Looking in his eyes, I saw nothing but love. At that moment, I realized that all the difficulties we went through this past year are over. The only thing left is a love so strong that it will see us through whatever challenges lie ahead for us. This truly is the first time in my life I have felt like anyone has offered me their love unconditionally. What a peaceful feeling to know you are loved no matter what changes life throws your way.

I have anxiously waited months for the tests I had done today. The urologist performed a cystoscopy. A tiny camera with a light at the end, was inserted into the urethra so she could examine inside my bladder. In addition, the Dr. did a bladder wash. A salt solution is sent into the bladder via a tube then the solution is removed for microscopic testing. Retrograde pyelography is an X-ray test used to examine the urinary system (kidneys, ureters and bladder) and this was also done. After all the procedures, the Dr. told me I do have blockages in my ureters. I return in a few weeks to receive all the results and her recommendations. I am worried but I know no matter what happens my husband will be by my side.

Beauty Is… a night out with your husband full of romance and fun. What a wonderful Valentine’s Day! Hubby and I had a great time at Kelly’s Steak & Seafood. We laughed so much and the food was delicious. For appetizers, we had Beef Carpaccio - tender beef is sliced paper thin and brushed with extra virgin olive oil, dusted with Hawaiian Sea Salt, and topped with a wasabi aioli, watercress, and Asiago strips and Kelly’s Prawn Cocktail – large Black Tiger Prawns served over crisp greens with Fireworks Wasabi cocktail sauce and fresh lemon. For an entree, Hubby had Barrel Steak - cut from the center of a prime rib, this ultra flavorful steak is grilled to your liking, sliced and served with a rich veal demi glaze. Accompanied by roasted garlic mashed potatoes and seasonal vegetables and I had Oven Roasted Garlic Prawns – black tiger prawns are split, seasoned with garlic, shallots and lemon. Served with Yukon Gold mashed potatoes and roasted vegetables. To Finish out the meal, Hubby had Warm Molten Chocolate Cake – dome-shaped dark chocolate cake with a warm moist chocolate center. Served with a drizzle of raspberry coulis on a pool of white chocolate anglaise. Dessert for me was Burnt Cream Trio – three individual rich and velvety custards flavored with mocha, vanilla, and grand marnier. Topped with a caramelized crackling sugar crust.

The last time Hubby and I dined out alone was on New Year’s Day at Joel Robuchon at The Mansion in Las Vegas. We were a little spoiled by Robuchon’s 16 course menu dégustation nevertheless, we were not disappointed by Kelly’s. The food was very tasty and service was better than to be expected for a busy Valentine’s Day night.

To be totally honest, I could have eaten a Whopper Jr. and greasy fries and I would have had a wonderful night. Hubby’s work has kept him away from home the last few Valentine’s Day so simply spending the holiday with him was enough to make it a magical night.
